Now we journey to the sunny Balearic island of Menorca for Mahón (pronounced mah-OHN)—a Spanish cheese that brings Mediterranean character and buttery tanginess to semi-soft perfection. An Island Tradition
Mahón takes its name from the port city of Mahón on Menorca, where the cheese was historically shipped to mainland Spain. This DOP-protected cheese has been made on this Mediterranean island for centuries, with production methods influenced by various cultures—including the British, who occupied Menorca in the 18th century and may have introduced techniques that give Mahón some cheddar-like qualities.
Mahón is made from cow's milk (sometimes with small amounts of sheep's milk added), using milk from cattle that graze on the island's coastal pastures where salty sea breezes and Mediterranean vegetation influence the milk's character. The curds are traditionally wrapped in cloth and pressed by hand, creating the cheese's distinctive cushion shape and smooth texture.
Understanding Mahón's Character
Mahón offers unique character influenced by island terroir and aging:
Tierno/Young Mahón (2-3 months): Soft, elastic texture. Mild, buttery flavor with slight tang. Pale ivory color. Easy-eating and approachable.
Semi-Curado Mahón (3-5 months): Firmer, more compact texture. Developing tanginess with nutty undertones. Slightly darker color. This is the sweet spot for most applications.
Curado/Aged Mahón (6-10 months): Firm, slightly crumbly texture. Pronounced tangy flavor with caramel notes. Golden-orange color. Complex and interesting for boards.
Añejo/Extra Aged Mahón (12+ months): Hard, crystalline texture. Intense flavor with sharp tang balanced by sweetness. Deep orange color from regular oil rubbing during aging. Special occasion cheese.
The flavor profile includes buttery richness with pleasant tang, subtle nuttiness reminiscent of almonds, hint of fruitiness, slight saltiness from island terroir, and developing caramel sweetness in aged versions.
The Distinctive Production
What makes Mahón special is its unique production and aging. The curds are hand-wrapped in cloth ("fogasser") and pressed, creating the characteristic square cushion shape with rounded edges. During aging, the wheels are regularly rubbed with olive oil and sometimes paprika, which creates the distinctive orange rind and adds subtle flavor. The island's Mediterranean climate influences aging conditions. Traditional farmhouse versions ("Mahón Artesano") use raw milk for more complex flavor.
The olive oil rubbing is purely functional—it prevents the cheese from drying out too quickly—but it also imparts subtle character that distinguishes Mahón from other European cheeses.
Selecting Quality Mahón
Look for the DOP Mahón-Menorca label certifying island origin. The rind should be smooth with orange-tan color from oil rubbing. The shape should be that distinctive square cushion with rounded edges. Choose aging level based on use—semi-curado is most versatile, añejo for special boards. If possible, choose "Artesano" versions made with raw milk for more complexity.
Mahón is less common in the US than other Spanish cheeses like Manchego, so you may need to visit specialty cheese shops or order online.

Mahón melts nicely though not quite as smoothly as Fontina or Havarti. Its tangy character adds interest to cooked dishes.

Storing Your Mahón
The oil-rubbed rind helps Mahón keep well. Wrap in parchment paper, then plastic wrap. Store in the vegetable drawer. The oiled rind is edible but can be strong—most people cut it away. Remove from refrigeration 30-40 minutes before serving. Properly stored, Mahón lasts 2-3 weeks. Aged versions keep longer due to lower moisture.
If the rind becomes very oily, simply pat it with paper towel before cutting. This is normal and actually protective.
