Havarti is the perfect introduction—a Danish cheese that brings buttery creaminess and surprising versatility to any board. A Danish Innovation
Unlike many European cheeses with medieval origins, Havarti is relatively modern. Danish cheesemaker Hanne Nielsen created it in the mid-1800s after traveling Europe to study cheesemaking techniques. She developed Havarti at her farm called Havarthigaard, giving the cheese its name. Her goal was to create an accessible, creamy cheese that could compete with established European varieties.
Havarti is a washed-curd cheese, meaning the curds are rinsed with water during production to create its characteristically mild, sweet flavor and creamy texture. The cheese is typically aged for three months, though some varieties mature longer. Unlike hard cheeses that depend on extended aging for flavor, Havarti achieves its appeal through production methods rather than time.
Understanding Havarti's Character

The flavor profile includes fresh butter and cream, subtle tanginess without sharpness, mild nuttiness in aged versions, and gentle sweetness that makes it universally appealing.
Flavored Havarti: Versatility Amplified
Havarti's mild character makes it an excellent canvas for flavoring. Common varieties include:

Many mass-market versions cut corners with stabilizers and artificial flavoring. Read ingredients—traditional Havarti contains only milk, cultures, rennet, and salt.

Storing Your Havarti
Havarti's higher moisture requires proper storage. Wrap in parchment paper, then plastic wrap or specialty cheese paper. Store in the warmer part of the refrigerator (not the coldest spot). Use within 1-2 weeks of opening for best quality—Havarti doesn't age well once cut. Remove from refrigeration 20-30 minutes before serving. If surface becomes slimy, cut it away—the interior is usually fine.
Havarti doesn't freeze well due to high moisture content. Buy smaller quantities and enjoy fresh.
